ooking for a healthy alternative to ice cream that’s packed with whole foods, complex carbs, high protein, calcium, plenty of vitamins/micronutrients, and healthy fats?! Look no further!

This yogurt and fruit recipe is deceiving. Although it sounds healthy, the convenient ingredients (frozen blueberries, way cheaper!) and unique preparation is the key to making this snack an easy, healthy dessert that my kid asks for every night!

This recipe includes:

  • Greek yogurt: calcium, probiotics, protein
  • Blueberries: polyphenols (which is a high antioxidant), anti-inflammatory, low sugar
  • Nut butters: poly-unsaturated fats
  • Cinnamon and spices: anti-inflammatory, anti-oxidant, can improve insulin sensitivity
  • Brown rice cakes: complex carbs made of whole grains

Nutty Blueberry "Ice Cream"

Total Prep Time:  5 min.

Servings:  1 bowl/serving

Ingredients

  • 1/3-1/2 cup 2% Greek yogurt*
  • 1 cup frozen blueberries
  • 1 tbsp crunchy almond or peanut butter - sub sunflower seed butter for nut allergies
  • 2-3 dashes Trader Joe’s Pumpkin Pie Spice — sub in 1 dash cinnamon, 1 dash nutmeg
  • 1/2 unflavored rice cake

*For more tart ice cream, go with 0-1% fat.

Instructions

  • Pour berries into bowl.
  • Microwave for 30 seconds — SKIP this step if you want an icier consistency.
  • Add in yogurt, nut butter, and spices into bowl.
  • Mix all ingredients together until yogurt becomes purple and nut butter is thoroughly spread.
  • Crush up rice cracker and sprinkle on top.
  • FEAST!

Insider Tips

  • When mixing all ingredients, spread it around the bottom of the bowl and up on the edges to expose maximum surface area.
  • Then, crush rice cake and add it errwhere! This keeps the rice cake from getting soggy AND increases crunch ratio!
