Servings: 4 | Cook Time: 30-35 min

🛒 Ingredients:

  • 8 oz gluten-free pasta (or regular)
  • 1 pint cherry tomatoes
  • 1 block (8 oz) feta cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp chili flakes (optional)
  • 2 cups spinach or kale (optional)
  • Salt & pepper to taste
  • Optional protein: grilled chicken, chickpeas, or tofu (about 1–1.5 cups total)

🥣 Instructions:

  1. Preheat oven to 400°F. In a baking dish, add tomatoes, garlic, olive oil, salt, pepper, and chili flakes. Nestle feta block in the center. Bake for 25–30 minutes.
  2. While baking, cook pasta according to package instructions.
  3. Remove baking dish, stir everything together (feta + tomatoes will become creamy).
  4. Add spinach while hot so it wilts, then stir in pasta and optional protein.
  5. Divide into 4 containers and store up to 4 days.
