1 lb chicken breast or tofu, cubed
1 tbsp olive or sesame oil
3 cups mixed stir fry veggies (fresh or frozen — think broccoli, snap peas, bell pepper, carrots, mushrooms)
2 cloves garlic, minced
1 tbsp fresh ginger, grated (optional but recommended)
2–3 tbsp low-sodium soy sauce or coconut aminos
1 tsp rice vinegar or lime juice
1 tsp coconut sugar or honey
Optional: sesame seeds, green onions, chili flakes
Serve with: cooked brown rice, rice noodles, or cauliflower rice
🥣 Instructions:
Heat oil in a large pan. Add chicken or tofu and cook until browned.
Toss in veggies, garlic, and ginger. Stir fry until just tender.
Mix in soy sauce, vinegar, and sweetener. Stir for 1–2 minutes until everything’s glazed.
