Healthy Lazy Chef 👩‍🍳 Pepperoni Roll


his version of the Healthy Lazy Chef is a recipe that is healthy FOR THE SOUL! Behold my favorite home-made birthday treat every year. It combines home baking with the basic contents of a pizza without the sauce, rolled into a convenient vessel for maximum consumption and enjoyment!

This recipe is a long-standing tradition in the Hargrove household, coming from my mother-in-law, Georgeanna. A definite favorite for adults and kiddos alike!

Pepperoni Roll 🍕


  • 1 bag of pre-made pizza dough (Trader Joe’s, but if you’re the kind of person who makes their own dough, make enough for about 1 lb.)
  • 2 whole eggs
  • ⅔ cup parmesan cheese
  • 8 ounces sliced pepperoni
  • 8 ounces shredded mozzarella cheese
  • ½ tablespoon oregano



  1. Flour counter space or board and carefully place pizza dough.
  2. Roll or stretch to roughly 12” x 16” size.
  3. Whisk eggs and parmesan cheese together in a separate bowl.
  4. Spread whisked mixture over dough, leaving ½ inch margin along the sides.
  5. Layer pepperoni and mozzarella cheese on top, leaving the margin, & sprinkle oregano last.
  6. Roll length-wise & seal edges using your index and thumb to press dough together.
  7. Bake on a sheet pan at 375 degrees for 30-minutes or until golden brown.
  8. Let sit for 5-10 minutes and slice into 1” sections. 
  9. Most importantly - ENJOY!
